A Test-Run

That orange mess would be pumpkin oats! Since I’m making them tomorrow for 80-100 people (cooking demo at work), I figured I should do a test run, and by test I mean eat them for breakfast .  This is “pre” giant scoop of peanut butter of course… Because what’s oatmeal without PB?  Early Grey Tea with soy milk on the side aka a Starbucks Tea Latte for a fraction of the price.

I so wish I could show you my lunch because the salad pot luck was a huge success.  My plate reminded me a Whole Foods kind of salad… maybe something like this, minus the natural light.

Anyways, I may have had some undocumented chocolate at a very important meeting this afternoon.  I didn’t take a picture because, well, it was a very important meeting!

Dinner was consumed in two parts thanks to an evening conference call.

Post-Run Recovery (speedy 5k): Blueberries/Vega Shake & Go/1% Milk

Post-Conference Call Recovery (1.5 hours later, much needed):

In my family, we affectionately refer to this creation as “egg-in-the-hole”.  Creative, I know.  So delicious and reminds me of childhood when my mom used to make it.  You have to cook it just right so the outside is crispy, but the yolk is still runny.  Takes talent.

Tomorrow should be fun–but now I’m starting to get a little bit nervous?? Hopefully I can get some nice pictures of the finished product!
