FUEL
What do I eat?

Basically, I love to eat delicious, wholesome food with no added junk. My food philosophy is to eat simple and healthy meals using minimal (and budget-friendly!) ingredients that will fuel my day of school, exercise, and everything in between.
On an average day, I will eat 3 meals and a snack between lunch and dinner. I include lot’s of whole grains, fruits, veggies, and nuts, some dairy and fish, and minimal meat/poultry. I’m not a vegetarian and I don’t plan to be. I love food–as long as it’s REAL food!
Although I realize that it’s not realistic for me to eat this way 100% of the time, I try my best. On the days that I take in some not-so-healthy things (like on vacation), I enjoy it for what it is and get back on track when I can. You only live once! Life is too short to skip the things you love.
I LOVE a good-quality homemade dessert, but I don’t feel the need for it every day and usually don’t keep sweets in my apartment. I can easily pass on processed cookies, candy, and cake, but give me ice cream, homemade cheesecake, pumpkin pie or some dark chocolate and I will gladly accept!
I don’t count calories because I don’t really think there’s a need to. Our bodies are amazingly well-designed machines that can account for an “over-pour of olive oil” here or an “extra scoop of peanut butter” there… If I take in too much energy at lunch, I feel like I probably won’t be as hungry at dinner, and in the end everything will balance itself out. I think if you eat when your hungry, stop when your satisfied and keep an eye on the ingredients you put in your body, you’re on your way to good eating habits.
Some of my go-to meals:
BREAKFAST
- Banana, raisin and walnut oatmeal
- Smoothies (click here for a recipe!)
- PB and J toast + fruit
- Yogurt, granola, fresh berries
- Cereal with sliced banana
LUNCH
- Veggie/hummus wrap+ apple
- Grilled cheese/spinach sandwich + tomato soup
- Bean, rice, cheese quesadilla with salsa
- Almond butter and preserves Sandwich + raw veggies
- Leftovers!
DINNER
- BBQ tofu, sweet potato fries, couscous
- WW angel hair pasta with red sauce + salad
- Scrambled eggs with veggies and cheese + toast
- Veggie/bean stir fry on brown rice
- Tacos, quesadillas, burritos
Love to snack on: LARABARS, lattes, cereal, fruit + nut butter, yogurt with granola, veggies + hummus, string cheese, and trail mix.
