Carmelized Tofu Stir-Fry

1/3 block of extra firm tofu (drained and pressed)
Asparagus, chopped
Carrot and Celery (1 stalk each), chopped
1/2 zucchini, chopped
Brown sugar
Olive oil
Peanuts
Sesame seeds (optional)

Tofu rub:
chili powder
cinnamon
ginger
hot sauce

Cube tofu and coat with the rub.  Bake at 425 for about 10 minutes.  Meanwhile, saute the veggies in a skillet with a pour of olive oil for 5-10 minutes until tender.  Remove from the skillet and set aside.

When tofu is finished baking, toss into the skillet with a good sprinkle of brown sugar and let carmelize for 2-3 minutes.  Add the veggies back in and stir.  Top with peanuts and sesame seeds.
