College Student Chili

Ingredients:
1 can black beans, drained                       1 bell pepper, chopped
1 can white beans, drained                       1/2 onion, finely chopped
1 can kidney beans, drained                    2 cloves fresh garlic, minced
1 can diced tomatoes                                  1 cup frozen corn

Seasonings: I like chili powder, cumin and EXTRA hot sauce! Really, you can use whatever you want/have on hand.

Directions:
Saute the onion and bell pepper in some oil for a couple of minutes over medium heat (until onion is translucent) and then add garlic, saute for another minute or two.  Transfer mixture to a large pot and add all other ingredients.

Turn the heat up to medium-high and bring to a light bubble.  Lower to a simmer, cover, and leave it alone for at least 30 minutes.  Enjoy!

This recipe is so easy to make, and I always freeze 2 or 3 individual portions to pull out and eat later on when I’m out of good food, or I’m just not in the mood to cook.  It’s budget-friendly too!
