Stuffed Bell Peppers

I love stuffed peppers because you can pretty much use whatever you have on hand and they always turn out great!  This is a great example.

1 green bell pepper, halved
About 3/4 cup brown rice (cooked)
1/2 cup black beans
1 chopped tomato
Seasonings: salt and pepper, cumin, chili powder

cheddar cheese (shredded)

Preheat oven to 375.  Boil the pepper halves for about 2 minutes and let dry on a towel.  While the pepper is boiling, throw the remaining ingredients into a skillet to combine the flavors.

Fill each half of the pepper with rice/bean filling.  Top with cheese, place on a baking sheet, and bake for about 5 minutes or until cheese is bubbly.
