Not enough time in the day…

Grape Nuts hot for b-fast today… So good!

I knew I wanted something warm, but wasn’t in the mood for oats—these are a  nice substitution once in awhile.

I heated them up with skim milk for a minute so they still had a little bit of crunch, then I added 1/2 banana, flax, cinnamon, brown sugar and almond butter on top.

Not gonna lie, I’m feeling pretty overwhelmed this morning. I’m definitely not prepared for my biochem exam tomorrow and I’m supposed to be going on a 10-miler with Jess and Buddy on my 3 hour break (and I NEVER have that big of a break during the day… fate?), but I’m starting to feel like I should study instead. BLAH.  If I wait until tonight to do homework, I have a sneaky suspicion that nothing will get done once our friend Steve gets into town.  What to do!!!!????

I know I can complete it by myself, but the problem is finding the time to do it.  We’ll see….

Besides that, on the agenda for today: I’m training a brand new client for the first time, as well as some other appointments and  staff meeting later on tonight.  I’m making those Mediterranean turkey burgers and sweet potato fries for family dinner tonight.  Figured the boys would like those and they make for good leftovers!

Time to get moving with my day… Hope your Tuesday goes well!

Bring it on Spring Break

Breakfast was banana/flax/PB oats–Hell’s Kitchen peanut butter, of course.  This stuff is seriously addicting!

I can’t believe that it’s finally Friday.  The second round of my Boot Camp class starts tonight (Spring Break Boot Camp), so I’m excited to meet a new group and get started on working with them.  Bring it on Spring Break!!!

Smells like Cinnabon in here!

This Ezekial cinnamon raisin bread smells pretty bomb when you toast it up. My apartment smells like cinnamon rolls!!! This is almost ironic seeing as I was just in a mall and tempted by the mouthwatering aroma that is, Cinnabon.  I don’t even think those things are that good.  It’s definitely your sense of smell that gets ya.

Anywho, I put homemade strawberry jam on one, and peanut butter, flax, cinnamon and agave on the other.  Done.

I’m sipping on some Awake tea with soy to get me moving.  Can I just point out that I asked for tea with some soy milk at S-Bucks the other night and they charged me for an unsweetened tea latte which was over $3.00?!  I don’t want to rag on the Bucks because you guys know how they hold a special place in my heart, but this was a little disappointing.

After looking at my bank account yesterday (don’t do it as much as I should), I realized that I’m spending WAY too much money on little things like americanos and food outside of the house (Pita Pit, Vivannos, etc.).

It’s time to cut back because I really want to have a decent amount of savings going into summer so I can get out and do things! I’m talking concerts, camping, white-water rafting, a triathlon….  These are not cheap things!  I’m officially putting myself on spending restriction, besides the necessities.

Another Monday, another bowl of oats

Remember when I went to Minneapolis last year for Girl’s Weekend?  You can find recaps here and here.  These were a couple of my first posts because I started up Fuel and Fitness just a few days before heading out of town.  I thought of it because this coming weekend is the weekend of the annual trip and I can’t stop thinking about how fun it will be!  I looooooooove this trip and look forward to it all year.  I should have tons of great pictures.

Anyways I decided to randomly check the date of my first post because I didn’t remember the exact date but new it was sometime around this weekend and my blog’s first birthday is tomorrow!!!! Crazy how fast time flies, yes?  I may have to do something special tomorrow:-)

On to breakfast:

I used the stove to make banana oats today and it really does make for a much more volumous bowl.  Here’s what I threw in the pot:

  • 1/2 cup OF oats
  • 1/2 cup vanilla soy
  • 1/2 cup water
  • 1 banana
  • 1 T flax
  • cinnamon
  • salt

I added a scoop of chunky PB and spread it all over the place once it melted a bit. Fabulous way to start a Monday!

Busy day ahead, better get moving.

Best bowl of oats, ever.

1/3 cup oats, 1/3 cup soy milk, 1/3 cup water. Combine and microwave for 2 minutes on high.

Top with:

  • grape nuts
  • flax meal
  • coconut
  • pom
  • 1 scoop of White Chocolate Wonderful PB (SOOOO good!)

Delicious and kept me full all morning…

Quick, easy, healthy, tasty.  Tuna melt with produce. YUM.

Gotta go train, workout, and get ready for a night on the town.  The weekend is fast approaching, folks!

I don’t know if this is weird, but I was struggling to get out of bed until I thought about how good french toast sounded, and suddenly I was wide awake! It was so worth it…

  • 1 egg
  • splash of vanilla soy milk
  • cinnamon

Dip Rudi’s HSWW in batter, then in flax meal.  Butter a pan. Cook on medium heat. Add iced caffeine on the side.  Yum.

It’s been awhile since I’ve purchased this bread, but man I forgot how great it was.  Highly recommended!

Snack-a-licious

Hey everyone!

Soooooo let me just start by saying that you’ll have to excuse my eats for the next week or so because I am really trying hard to use up my freezer/pantry foods and my goal is to not waste ANYTHING when I move out of my apartment a week from Saturday.

It will tough, I know, but it really bothers me to waste food so get ready for some “creativity.”  Today looked like this:

V-con banana bread that I whipped up yesterday because I was in a baking mood… By baking I mean “didn’t feel like studying“.

I also had some Stonyfield plain with blueberries, flax and cinnamon. YUMMY!

Whenever I eat yogurt in the morning, it seems to keep me extra full.  I needed this to keep me going for about 5 hours and it definitely worked breakfast magic!

From this point on in the day I pretty much snacked my way along because I was busy and sometimes I just feel like eating lot’s of little things instead of a meal. Orange, cheerios, string cheese before my workout…

…and then I proceeded to go to town on dates when I got home (so good!!!!), plus some chicken breast deli meat and a small bowl of grape nuts.

For dinner, my “friend” Amy cooked me up one of my favorite convenience foods:

These were on sale last week and I was SO happy because they are really delicious and so quick.  Check out the ingredients list.

The tortilla that these are wrapped up in is the best that I’ve ever had.  It’s hard to find a good tortilla that isn’t loaded with weird additives and tastes good.  I love my Ezekial ones, but those are hearty with a nutty taste and I like a soft and smooth one for burritos.

I had a salad (lettuce, cabbage, avocado) on the side and this was a really satisfying dinner.

Walnut and Flax encrusted French Toast: Edited

Easter breakfast!!! I had so much fun making this… A great way to start my Sunday morning.  It was really simple too.  Here’s what I did:

1.) Dip a slice of whole wheat bread into batter (vanilla soy milk, 1 egg, cinnamon).

2.) Press the bread into a mix of crushed walnuts and flax (some falls off, but do the best you can!).

3.) Butter a pan, and “fry” each side until crispy.

4.) Carmelize berries/bananas by adding them to a separate pan with some brown sugar and cinnamon.  Keep the heat on medium or lower to avoid scorching.  Slow and low on these!

5.) Plate the french toast and layer the fruit mixture on top.  Enjoy!

ANNNNNNNNNNNNNNNNNNNNNNNNNND…. Yesterday I had the sudden urge to stop at the food co-op after my workout and looky what I found:

You have no idea how excited I was… I’m such a geek, I know! LOL Although I said no more bars for awhile, I think this qualifies as an exception since I haven’t been able to find this guy anywhere.  Come on, you know you would do the same!  I’ll eat it this week sometime before a workout.  Hope it lives up to all the hype!

Just got done with my last lab of the semester!!!!! I’m so excited that from now on Tuesday classes will be dunzo at 12:30! Anyways, I had a good day of eats to go with my good mood because I’ve got yummy groceries this week…

Starting with my favorite meal of the day:

I made a yogurt bowl because I finally picked up some new yogurt (Stonyfield Lowfat Plain) and Strawberries were buy 1, get 1 free!!!  I’ve eaten almost an entire carton in 2 days and you will be seeing lot’s more!

Lunch was packed and eaten during class per usual for Tuesdays.  I had a hummus/arugula sandwich (on homemade oatmeal bread!) + a fuji apple and some trail mix made with walnuts, raisins and choco chips.

I’ve never bought arugula before but it was on sale and I thought what the heck.  Just like I had always been told, it has a slightly peppery taste.  Pretty good!

They were all out of pink lady’s this week, but this guy was nice and crunchy!

Dinner was SUPER early because I worked out and was hungry for more than just a snack… I threw together this black bean and pepperjack quesadilla and cut up my cantaloupe so I could have some on the side.

Of course by the time I got home from lab, I was hungry again, so I just finished dinner #2… mug of oatmeal with flax, cinnamon, strawberries, and soy milk

Time to do some NSCA studying and finish up some laundry… Night!

Hey there!

I hope everyone’s hump day was superb and went by as fast as mine did!  I couldn’t be happier that it’s Thursday tomorrow… I feel like it was just the weekend!!

Walnut, Raisin, Flax oats w/brown sugar with a side of the last two pieces of my Veganomicon Banana Bread!

Lunch was this packed sammie of pesto (the last of it), tomato, spinach and Dijon mustard.  I threw in a honey Oikos and a banana too.

I snacked on some pecan pie LARABAR goodness (which was DE-LISH!) after Step to tide me over to THIS dinner

Homemade White Bean and Vegetable Soup. I threw everything I wanted  to get rid of in the pot and it turned out great! Here’s what went in:

  • 1/2 onion
  • 2 cloves garlic
  • 2 zucchini
  • 1/3 large bag of spinach
  • About 10 baby carrots
  • 1 can diced tomatoes
  • 1 can great northern beans, about 1/2 cup of black beans
  • Fresh basil
  • dried oregano & thyme, salt and pepper
  • About 2 cups of water?

I’ve never really had great success with soup besides chili so I was excited that this tasted good!

Pepperjack cheese quesadilla on the side for dipping… YUM!  I loved this meal…

I think my chem exam went well today.  One less thing to think about, but there’s always something to fill that void:-)
