Grape Nuts hot for b-fast today… So good!
I knew I wanted something warm, but wasn’t in the mood for oats—these are a nice substitution once in awhile.
I heated them up with skim milk for a minute so they still had a little bit of crunch, then I added 1/2 banana, flax, cinnamon, brown sugar and almond butter on top.

Not gonna lie, I’m feeling pretty overwhelmed this morning. I’m definitely not prepared for my biochem exam tomorrow and I’m supposed to be going on a 10-miler with Jess and Buddy on my 3 hour break (and I NEVER have that big of a break during the day… fate?), but I’m starting to feel like I should study instead. BLAH. If I wait until tonight to do homework, I have a sneaky suspicion that nothing will get done once our friend Steve gets into town. What to do!!!!????
I know I can complete it by myself, but the problem is finding the time to do it. We’ll see….
Besides that, on the agenda for today: I’m training a brand new client for the first time, as well as some other appointments and staff meeting later on tonight. I’m making those Mediterranean turkey burgers and sweet potato fries for family dinner tonight. Figured the boys would like those and they make for good leftovers!

Looks like it was baked in the oven, doesn’t it? This is just a mix of 1/4 cup grape nuts, 1/4 cup oats, cinnamon and flax, walnuts and raisins, plus vanilla soy milk. Added 1/2 banana after heating. Delish!
I love the texture combo of mixing the 2 cereals together… Definitely a nice change from the regular oatmeal.
Today should be utterly insane. I have a stats exam, which I probably didn’t study enough for, class, boot camp and full body fit. When I come home I need to PACK for the weekend and get super organized for Thursday so we can get out of town at a decent time.
All day Friday I’ll be attending this. I’m SO excited to learn some new things and get officially certified.
My legs are feeling pretty sore today from my run yesterday so workout is up in the air for today. Have a great Wednesday!

A nice and comforting, hot bowl of oats is exactly what I wanted this morning. I mixed 1/3 cut old fashioned oats with 1/4 cup grape nuts to add some different flavor and texture. I absolutely LOVE grape nuts (buy it in bulk from Sam’s Club), especially hot, so I knew I would like this.
I dumped in some milk, chopped up a banana, and microwaved for about 2 1/2 minutes on high, then topped with a scoop of PB, jelly, and rest of the banana. Delicious!
Does anyone else feel like milk has gotten a bad rap in the past few years? I started avoiding it when I moved away to college the first time and I’m not even sure the exact reason… Probably something to do with the antibiotic/hormone scare tactics at first, then I think I just lost my taste for it.
I’m definitely BACK ON the milk train. It’s such a nutritious and tasty food! Also, it’s nice for when I feel slightly hungry at night time but don’t want to load up on snacks. For those of you who don’t love the taste, oatmeal/other hot cereals are a great way to sneak some into your diet because the result is creamy oats and you don’t even taste it! Vanilla soy milk makes the CREAMIEST and frothiest coffee.

1/3 cup oats, 1/3 cup soy milk, 1/3 cup water. Combine and microwave for 2 minutes on high.
Top with:
- grape nuts
- flax meal
- coconut
- pom
- 1 scoop of White Chocolate Wonderful PB (SOOOO good!)
Delicious and kept me full all morning…

Homemade tortilla chips, homemade guac (avocado, garlic, cilantro, pinapple salsa red onion, fresh lemon juice) and every other vegetable imaginable… Food happiness:-)
Food science exam today (yesterday in lab, we made fresh butter and whipped–amazing!). I needed a good breakfast to fuel me through the morning sans coffee because I wanted to feel sober.

Egg, black bean, guacamole and hot sauce and veggie cream cheese on a warmed tortilla. This was so good! I also had OJ and a new yogurt that was fabulous as well. Check this stuff out!

I don’t really buy sweetened yogurt because it has so much extra sugar, but I was intrigued by the unique flavors of this brand. The vanilla chai was SO worth the sweetener…
I topped it with Grape Nuts for crunch. Should be good to go for the morning.

Grape Nuts hot! I was so excited that these were on sale this week… I think I ate a variation of this meal every day when I was a freshman living in the dorms! This bowl had 1/2 cup each G-nuts and vanilla soy milk, plus 2 chopped dates, sliced almonds, cinnamon and brown sugar. SO yummy!
My boring but tasty packed lunch:

Chicken/aioli pita with lettuce, pb stuffed dates (my new obsession thanks to Gina and Jenna!), and a delicious Jazz apple.
After a tough lower-body workout focusing on the stability ball (I have been loving this thing lately!), I came home and made this de-lish raspberry smoothie:

Then after hours of studying/procrastinating… I needed some fuel in the form of Annie’s mac. This was SO deliciously cheesy and I attribute it to the use of plain yogurt instead of milk in the cheese sauce. Try it, it’s so much better!

I always like to jazz up this stuff so it’s more of a meal than a side, so I sauteed some frozen peppers and onions with 1 clove of garlic, salt, pepper and smoky paprika. Then I added the cooked pasta and prepared cheese sauce (1/2 the box) into the skillet to make sure I got all of those wonderful flavors in and topped it off with a lot of hot sauce. Perfect dinner!

The Biggest Loser is good tonight and I’ve still got a little more studying to do… Chem Exam #3 tomorrow!
