Southwestern breakfast wrap, healthified

  • Ezekial tortilla, spread with veggie cream cheese
  • 2 scrambled eggs
  • Avocado slices
  • Red and Green bell pepper strips
  • Pineapple/peach salsa (my newest obsession)
  • Shredded cheddar

Heat it up before you add the salsa, then roll up tight and cut it in half to make eating it without total disaster a possibility.  Enjoy!

I’m in an extremely good mood today!  Must be the spring-like weather, Becky coming into town, and the strong coffee I’m currently drinking.  Weeee!

Opinions on Trader Joe’s

Homemade Broccoli Cheese soup!!!!!  I’m liking this whole “having food waiting for me when I get home” for all meals of the day.  Buddy (Jess’s brother) made this last night so we would have it for lunch/other meals throughout the week and it’s really really good.

I had chips and salsa on the side because we rarely buy chips anymore and I’ve been craving them like mad.

Mid-afternoon/pre-boot camp snack–1/2 Fage, granola, walnuts, raisins, cinnamon and agave:

Spaghetti, homemade garlic bread, and salad with TJ’s Goddess dressing aka my favorite dressing ever.  I just read an article that says 80% of Trader Joe’s products are sold under their label but aren’t made by them.  News to me!  This dressing is one of those products supposed products and the ingredients are EXACTLY the same as Annie’s Goddess (which is double the price).  It can’t be proved that this for sure, of course, but it’s easy to guess which brands make what.

I personally love the style of Trader Joe’s.  They sell all of the foods that I like but at reasonable prices (prime example, almond butter). I’m convinced that anywhere you can get good-tasting $2 bottles of wine just can’t be bad.

Some may argue that it supports the “big box” corporations, but I think they follow good business principles and they seem to be environmentally conscious and community involved.

How to make a BLT gourmet

I know, I know, it may not look super “gourmet” but that’s because I was too hungry to get a great shot of it before I ate.  Note the bite taken out of it.  However, this sandwich was pretty great.

When I bought bacon the other morning to have with our pancake breakfast, I knew I wanted BLT’s sometime this weekend.  Even though this is one of my favorite sandwiches, I never think to have them because bacon is expensive and we generally don’t buy meat.  Buuuuuuuut I really wanted this so I rolled with it.  Ingredients:

  • 2 slices toasted Ezekial sesame
  • mayo and dijon mustard
  • avocado
  • sundried tomatoes
  • extremely crispy bacon (the only way I like it!)

I finished it in about 3 minutes flat because I ran 9 miles today!!!!!!! This is a distance record for me so I’m pretty pumped about it.  I felt pretty great the whole time, minus sore legs at the end.

Nothing some ice can’t take care of.  This is how I ate my dinner–the numbness felt so good.

I had a couple of those oatmeal chocolate chip cookies too because I was honestly still a little hungry after I ate all of that food.  Fine by me.

Oddly enough, I’m headed back to the gym in a bit to play intramural dodgeball!  How much fun does that sound?? Takes me back to my elementary school days in gym class…

Happy 1st birthday Fuel and Fitness!

Mmmmmmmmm.  I love eggs! This would be a fried egg on an Ezekial cinnamon raisin english muffin with cheddar cheese and peach salsa.  Apparently, I have a thing for the sweet/savory combo.  Especially when it comes to breakfast foods.   If you haven’t tried it, you need to!  I also really like putting homemade jam on an egg sandwich, but I decided that it might be a little much with the salsa this morning.

Here’s what I’m sipping on:

My absolute favorite tea of all time! For real.  I know I drink a lot of coffee but I consider myself a pretty big tea person as well.  That being said, I’m a purist when it comes to which kinds I like.  I don’t care for anything fruity or flavored (just bought some Celestial Seasonings that I was not impressed with), and I really don’t like chamomile.  My favorites are black, earl grey, green ginger, chai, rooibos… You get the idea.  Of all types that I’ve tried, I keep going back to tried and true TAZO—the best in my opinion.  But then again I’m a loyal Starbucks fan and this could be part of it too… Either way, it’s delicious!

So on a fun side note, it’s Fuel and Fitness‘s 1st birthday!!!!!!  I’m thrilled that I’m still blogging 1 year later because there were many times when I contemplated giving up on it.  Time passed between posts, I quit taking pictures of anything, even when it was a really interesting/beautiful meal!  I really didn’t know where I wanted to go with it.

After moving to Colorado and attending FNCE (ADA’s annual Food and Nutrition Conference and Expo), I was rejuvenated and suddenly had the itch to start posting again.  Remember this post? I fell back in love with product reviews after this day! haha…I didn’t know how often to post and I didn’t know if I had any readers left—but I was fine with it.  I just wanted to write about the things that I love to talk about so much!

Thanks to my fantastic job, I’ve had the opportunity to learn so much about fitness and nutrition since the beginning of the school  year and I love sharing it with everyone.

I look forward to posting and also to reading all of my favorite blogs which inspired me to get started in the first place (Kath Eats Real Food, Eat, Live, Run, Carrots ‘n Cake, Healthy Tipping Point, The Inner Workings of a College Graduate, and the Fitnessista).  Thank you SO much ladies, I’ve been reading all of your blogs since the very beginning!

Cheers to one year, hopefully there will be many more to come!

Today was a faaaaaaabulous day!! Classes were interesting, played a really good game of racquetball, taught boot camp, and gave some tours of the rec center to a group who is interested in starting to work out. Can I just say that I really love my job?  Like a lot.   There were a ton of great questions asked tonight both nutrition and fitness related and I swear I could have went on and on with this group… Wonderful bunch of ladies!

And I’m eating this lovely plate of  goodies as I type:

Leftover taco dip from the superbowl party (I think it’s finally gone, which is a good thing), rice and beans, peach salsa, olives and blue chips.  The salsa that we’ve been buying lately is this brand:

It. is. amazing.

I’m off to Starbucks to study the rest of the night.  Lot’s of things to get done!!

I love when leftovers taste better the next day!  My black bean and veggie enchilada heated up wonderfully for lunch.  I had some crunchy carrots, red pepper, and a honey crisp on the side.

Dinner was something simple and tasty because I wasn’t super hungry when I got home.  A stand-by in this house… Scrambled eggs!  I threw on some peach salsa, hot sauce, and roasted up some potatoes for a side.

This is one of those meals that although not gourmet, hits all of the bases (protein, veggie, starch) and is definitely more wholesome than take-out.  Grocery shopping is in my near future!

Off to be tutored on Grey’s Anatomy by the roommate… Have never seen it, but apparently I’ll be obsessed with it soon.
