I haven’t had oats in AGES! Perfect little Saturday morning pick-me-up along with a glass of Simply Orange (we’re out of fruit, this is the best I could come up with!) and an Americano with soy aka my favorite drink in the world. Better picture so you can actually see the food:

I needed something that would hold me over for awhile because I’ll be away from my house until noonish between working the 5k and training a client. Oatmeal was an obvious choice!

Veggie roll and spicy tuna roll. Tuna roll was EXTREMELY spicy, exactly the way I like it. Jessica tried it and said her mouth was on fire for the rest of dinner. Success.

It’s slim pickings in this apartment!!! Dinner was a cheesy pasta that actually was pretty decent thanks in part to a jar of Classico pasta sauce. I was instantly drawn to this flavor because as I mentioned in my previous post, I LOVE onions—especially caramelized ones.

I love this brand! It’s funny to me that I really only make pasta when there’s nothing else to eat in the house. But at the same time, I really like it so I’m always pleasantly surprised! Finished off a box of the twisty kind and added some shredded mozzarella on top to make things more interesting.

So I can’t believe Becky is gone already. I feel like that visit went by WAY too fast and I’m already suffering from withdrawals. I miss my buddy! Before we dropped her off with another friend yesterday, we took her to the only our favorite local sushi place for an early dinner. I know I say this all of the time, but I found my new favorite. I give you, the volcano roll:

SPICY and delicious. Just the way I like it! The shredded stuff on top is crab and there was some type of amazing sauce soaked into it as well. I was in food heaven. Oddly enough, every time I eat sushi, I proclaim that a “light meal” sounds perfect. Then I proceed to order all of the fanciest rolls and eat way too much. Oh well—still my favorite food of all time. Bring it on!

Man it feels good to wake up without an alarm, have a leisurely breakfast, and have nothing to do.

It looks like it’s going to be a beautiful day! I think some relaxing outside with a non-school book may be in order… BUT I also have to do laundry and pack for the big race day tomorrow. We’re leaving this afternoon to go pick up our packets!!!! We’re spending the night at a friend’s house so we don’t have to get up so early in the morning and I’m paranoid I’ll forget something!
I’ve been trying to take it easy for the last couple of nights and get lot’s of rest. So instead of going out for drinks with people from work, Jessica and I had a girl’s night instead. Tons of fun!

2. SUSHI

Yeah this was amazing. The “New Orleans” roll that is closest in the picture was super spicy and delicious—definitely my favorite of the three. I’ve come to the conclusion that avocado makes a sushi roll. The creaminess is unbeatable!

3. Sappy chick flick

So sad. I don’t usually appreciate movies like this, but overall I thought it was pretty good. Didn’t read the book but I would consider it now. Eric Bana is so handsome… and I LOVE Rachel McAdams! Absolutely gorgeous. I thought they had great chemistry together.
So I’m now off to get my stuff together for tomorrow… Wish me luck! The next time you hear from me I’ll be giving a race-recap. Enjoy the weekend everyone!

I. heart. sushi night.
We always pick some up when we grocery shop for the week because we never go to that side town otherwise. Plus it’s quick and easy–perfect for nights like tonight when I really don’t feel like cooking. Also had some grapes, just because. Quite possibly one of the greatest fruits there is!

So I was incredibly sore from my sports extravaganza yesterday. When I woke up this morning I felt like I had gone on a long run yesterday! Guess that means it was a good workout at least… Needless to say, I kept today’s workout pretty easy.
I’m thinking that for the rest of this week I’ll do a few 2-3 milers to keep my legs fresh, but that’s about it. Race day=6 days away.
Oh and lunch wasn’t too bad today either:

Turkey wrap + pineapple/strawberry mix

Summer fruit is on it’s way back!!!! Love it.
My dessert tonight will be in the form of espresso at my second home.

FISH #1

Sushi is probably my favorite food there is. Something about it is just so perfect and fresh. We picked up these rolls while at the WF in Fort Collins last weekend and boy were they fabulous. Avocado just makes a roll great. So rich and creamy!
FISH #2

This would be pecan-crusted tilapia from the seafood case. I pan-fried it in a decent amount of canola oil and the crust was perfectly crispy and delicious. Of all the ways I’ve tasted fish, pan-frying is definitely my preferred method. it always turns out perfect and is SO quick. On the side you will see kale chips (so good) and corn (nothing special here). Great meal.
FISH #3

Red curry salmon burgers. I put this on on a toasted sourdough english muffin with spinach, garlic laughing cow, hummus, and cholula. Pretty much restaurant worthy I think.
Random thoughts:
- 1st biochem lab today, not that bad
- I’m eating delicious homemade pizza for lunch
- training for a 1/2 marathon is hard
- heading to the mile high city this weekend!!
- SO glad it’s Thursday!

I’m so excited to say that I didn’t end up eating my boring PB & J wrap for lunch today. Not that it’s a bad lunch, it’s one of my favorite combos actually… just not the most exciting thing to take pictures of.
This is much better:)

I mentioned in my very first post that the woman I intern with happens to run several dining locations on campus. We ended up meeting at the sushi bar (inside the Student Service Center) and she treated me to lunch! Can’t get much better than having connections for free coffee and free sushi!
I had the vegetable maki roll which was avocado, asparagus, mushroom and carrots I believe… Fantastic! The stickiness of sushi rice just makes it so darn good. And I liked sesame seeds on the outside too.
Since it was a small-ish lunch, I’ll probably chow on the PB wrap after class as a pre-gym snack. Aerobics is canceled again today, so I need to do some good cardio. Any suggestions? Keep in mind I have NO tunes so something quick would be preferrable. I may do another 5k at race pace so I’m done faster.
